Mango "Bread"

This is what I did with the mangoes.  It's really not bread in this version, it's in between bread and cake, it's stuff you'd eat on break?  The original recipe is here.  My version is this:

Mango Break Stuff

1 cup white sugar
1/2 cup brown sugar
1/4 cup butter, softened
2 cups all-purpose flour
2 tsps. baking soda (not powder)
1-1/2 tsps. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. salt
1/2 cup vegetable oil
3 eggs, lightly beaten
1 tsp. vanilla extract
3 to 4 cups chopped ripe mango (peeled & seeded first, of course)
1 cup shredded coconut

Preheat oven to 350 degrees Fahrenheit.  Lightly grease a 9 x 13 pan. In a large bowl, cream butter with white sugar, then mix in the brown sugar till you're sure there's no lumps.  Stir in flour a little at a time to keep it well mixed, and baking soda, cinnamon, ginger, and salt.  Stir in vegetable oil and eggs and vanilla till well blended.  The dough will seem thick and fudgy, but now stir in mango and coconut and, with the juciness of the mango, it will look more like cake batter.

Let it sit for 20 minutes.  Do Not Skip This Step.  This is what it takes for the baking soda to work, to make it rise.  If you promise not to forget, you can wait till now to start preheating the oven since 20 minutes should be long enough.

Spoon mixture into pan, even it out, and bake for 1 hour, or till a cake tester in the center comes out clean.

Very moist, very yummy.
