Holiday Meals So Far

Stuffed stuff for Christmas eve:
(1) potato & cheese pierogies with sauteed onions and sour cream
(2) chicken & vegetable potstickers with Thai peanut sauce
(3) stuffed white mushrooms

Stuffed Mushrooms Recipe:

1 cup whole wheat panko breadcrumbs
1/2 cup nonfat feta, crumbled
1/2 cup Trader Joe's eggplant and garlic spread
1/4 cup Trader Joe's pesto
1/4 cup chopped sundried tomatoes
2 Tablespoons minced fresh flatleaved parsley
1 Tablespoon olive oil
chopped mushroom stems from the mushrooms to be stuffed
salt and black pepper as desired

Mix together. Mound in & over the mushroom caps and put them on a lightly oiled/sprayed baking pan. Bake at 425 for 20-30 minutes, depending on thickness of mushrooms, till topping is browned and mushrooms are tender. Makes enough stuffing for 2 lbs. mushrooms, about 16 large ones.

Christmas morning:
(1) German Black Forest Cherry Liqueur Stollen from Coffeecakes.com
(2) apple-walnut coffee cake, not from Coffeecakes.com
(3) lowfat (ha!) brown & serve sausages
(4) not-a-quiche

Not-A-Quiche Recipe:

6 eggs, lightly beaten
1 cup nonfat half-and-half, or milk, or light cream
2 cups reduced fat shredded cheddar cheese
1/4 cup reduced fat bacon pieces
1 Tablespoon "herbes de provence"
salt and black pepper

Mix together well and pour into a casserole. Bake at 350 for about 50 minutes, till set. Serves 4-6.
